Mary brings deep operational leadership from within the industry - having held senior roles such as General Manager and COO. She has led openings, built and scaled teams, implemented systems, and driven operational performance across hospitality businesses.
Her focus is on structure, standards, financial control, compliance, and making operations work consistently in real-life conditions - not just on paper.
